I am travelling to israel. How do I change my sim card to get a new phone number

If you have a “carrier-unlocked” iPhone Xs or newer, adding a “pre-paid” eSIM profile from an Israeli mobile carrier should be the easiest way.

If eSIM is not a viable alternative for you but your phone IS “carrier unlocked” a prepaid nano-SIM is the easy, tried-and-true method. See:
