Upgraded to Monterey and Apple moved the toolbar for Mail tot he center of the window. It used to align left. Can I change it to align left as I am used to. It makes no sense to change this for the sake of changing it.

I frankly don't use the toolbar at all (all of the features in there may be done more quickly right from the keyboard).
While I don't understand what is so bad about the buttons being more to the left or right, I think I can offer you a way to have it as you want, at least to some extent.
View->Customize Toolbar and then drag as many "Space"s (not "Flexible Space"s) to the right side of the toolbar.
This will push everything to the left.

Did you try quitting Mail and relaunch it holding the Shift key for a bit of a safe launch of Mail...?
Did you try changing the Mail >View>"Column Layout" toggle some changes and come back to your preferred

New design, no changes to toolbar location. Other applications received this treatment in Monterey too.

Apple did remove the column option from macOS Mail

Note the toolbar is in the center of the window and not to the left where it lived under Catalina. Also, how can I add more contrast (without changing Accessibility features) to the tools and sidebar? This change to light gray on gray is not good. Not to mention the tools got smaller. Thanks for help.

Center of the window? I don't get it...
This is the older column view...You can change that to the new "3 column view"

You can also grab and drag the partitions larger or smaller if that is the issue...(?)
