I am unable to select my phone number to be used in iMessage on my mac. That area is greyed out and only shows the email address associated with my apple ID. I was previously able to use my Mac to send and receive iMessages from my phone number but it just stopped working suddenly.

Have you checked Settings/Screen Time for any restrictions?

There are no screen time restrictions. I am unable add my phone number as that function appears to be disabled. It happened on both my iMac and MacBook Pro at the same time.
