Fedex stole my macbook. order from Bhphotovideo. bhphotovideo refuses to do a refund/replacement. I have a serial number receipt and so on. What are my options?

Refuse to pay B&H. It is their responsibility to file a claim with FedEx.

Hopefully you used a credit card. Most if not all have fraud protection.

For what it's worth Apple is the only box for which FedEx will absolutely, positively insist upon a delivery signature. No exceptions. I assume they did not require one for B&H. The package may have been stolen by a porch pirate and not FedEx. Still not your fault.

If Fedex claims the package was delivered, get a copy of the delivery record from Fedex. If you have the tracking number (which is available on the order in your B&H account) you can get a tracking report from Fedex online. Start there.

In my experience B&H requires a delivery signature on shipments of computers and similar expensive items. Get a copy of the delivery confirmation & signature from Fedex.

Did you file a police report when the alleged theft occurred?

Even so, get a copy of the proof of delivery and file a theft report with the police. It will be well nigh impossible to get anywhere with a claim without them.

You have to take this up with FedEx and/or Bhphotovideo. Neither company is Apple.

Why can't Apple help if I have all the receipts, bank statements and so on?

The reason is that Apple did not sell it to you.
