Is there a way to back up my iphone11 without the display screen working?

If you had iCloud backup configured, it should still create a backup if you connect it to wi-fi and power. If not, there is no way. Connecting to iTunes and the computer with a damaged screen will prompt for you to trust the computer, and with a damaged screen, you probably cannot do that. The time to configure a regular backup schedule is before you experience a problem.
