dark mode for apple mail message body
I understand that you can use dark mode in apple mail for the background but how do you get the message body to use dark mode?

My preferences are set on "dark mode". Here is a screen shot of what I am referring to. The background is in dark mode but the actual message is in light mode. The question is how do I get the message body to use dark mode?

Just to add, to view non-HTML emails with a dark background, Select "Show with Dark Background" from Mail > View > Message.

From personal experience and take from there if you would.
In the General Settings as per below.
Light Mode is enabled, depending on time of Sunrise and Sunset which is controlled by " Language and Region " the e-mail body will switch from Black , when I get up at 04:30 AM EDT to White at around 06:30 AM EDT.

Unless the email is Plain Text, you can't.

Since the User is reply to oneself - difficult to to know to whom the reply is intended.
