Airplay on my devices has been a disaster lately running latest software. Apple TV 4K, MacBook Pro (16-inch 2021) running 12.3.1. Audio and video keeps skipping in and out.

That might point to a home network issue.
Try restarting the router, as well as the other devices.
Possibly a neighboring home network is causing interference on your network. Try setting different Wi-Fi channels. A restart of the router may also automatically select the best channels at that time with the least interference.

I thought that could be the case but it's happening in two different environments—in my office at work and at home. Started happening at the same time.
