Change the option: Double-click a window's title bar, from zoom to minimize in Dock & Menu Bar preferences in System Preference App.

Say what.. you mean like the yellow pill button(?) to minimize. Never use this feature it seems a total waste.

Try simply Command H to hide, the HUD (heads up display) Comand Tab you can use the mouse or tab your way across to select, this shows all open applications.

Full screen mode is convenient using mission control

Exposé is another great feature for working with muliple open windows in the same app— 4 finger swipe down.
