Stop Outlook from opening from finder

I have Mail set as my default email app, but if I double click in the Finder on a saved email (i.e. one I have saved to a folder on my hard drive) it opens in Outlook. How do I get it to open in Mail by default? I can force it to open in Mail by using the "Open with" facility but that takes an extra few seconds, and those seconds add up each day!

Thanks.

The default email app and the default app for opening a particular file type are not the same thing...

Right click on the eml file, click open with, and choose "other". In the dialog, select the app you want to open it with, and check the box labeled "Always Open With".
