I want to pair my iPhone 6 with my Apple Watch.

error on the watch: iPhone IOS Software version is out of date.

All available watches require an iphone with at least ios15 or higher,which means an iphone 6s or higher.

Your iphone 6 will only update to ios12 maximum as you know.

Your iphone 6 will only pair with a watch that is running WatchOS5 or lower.
