What is number sharing versus not number sharing when selecting watch plan?

Bought new series 7 apple watch today from Verizon, had option to share number with my existing iphone. Not sure what that was and what it does differently then if I had not selected that option. In both cases it seems the watch gets its own phone number.

Number sharing if your watch is the cellular version then you can make calls and send text without your phone present;
