How can I protect my iMac after the macOS catalina will stop updating software in November 2021?

Apple has made no comment as to when macOS Catalina will stop being supported, so no speculation can be made. However, even after macOS Catalina stops receiving updates eventually, you'll still receive background XProtect and MRT updates, which are the built-in anti-malware tools that work in the background. Also, review: macOS - Security - Apple and Protecting against malware in macOS - Apple Support. As long as you're careful online and don't download any unknown apps, you'll be fine.
