My Apple Watch beeps at me and glows all night. I don’t want to have to manually turn on Do Not Disturb every night. I can’t find an option to turn off notifications while I’m sleeping.

Have you a sleep focus enabled on your iPhone and watch? That should do the trick
Open the Settings app on your Apple Watch. Tap Sleep, then adjust these settings: Turn On at Wind Down: By default, the Sleep Focus begins at the wind down time you set in the Sleep app. If you'd prefer to control the Sleep Focus manually in Control Center, turn this option off.
