We appreciate the notes on troubleshooting you've already done. We do have some questions to help clarify what's going on, specifically with your phrase "cutting out".
Are your AirPods losing power suddenly in the middle of calls?
Is the audio cutting out for you hearing the other caller?
Is the caller advising that you are cutting out (your microphone)?
Do they have a good battery charge when using them on a call?
Are you near your iPhone when using them on a call?

Then, if you have access to another iPhone, we'd recommend pairing them to that other device to test them with phone calls. This will help further rule out if the issue is specific with your iPhone or the AirPods. We look forward to hearing back from you.
