Hi, my iPad current version is 14.7.1. If I upgrade this to 15.5 will all the apps be removed or all apps will be retained?

Updating your iPad should not impact any of your installed Apps or access to data - with the exception of any Apps that may not, of themselves, be fully compatible with the updated OS.

As recommended by ProustGiulio, it is good practice to ensure that you have a current iCloud or iTunes backup of your device prior to performing a system software update.

If you have any critical App’s upon which you rely, you would also be well advised to verify that the App supports (and is supported by) the updated Operating System. You can verify App compatibility by finding the App(s) in the App Store - each App listing its OS requirements. App Developers often have their own support pages, linked from the App Store, that provide more information.

The above aside, having performed routine due diligence, you should have no significant issues in performing the update to iPadOS 15.5.
