For example purposes, I saved a contact under 'Jane Doe' with a phone number of the business she works at. Recently, when I search for 'Jane Doe', nothing comes up but when I dial that number from the keypad, it shows it is calling 'Jane Doe'. What is going on?

You may have Contacts hidden in the Contacts App. I am not sure where you are searching for however watch the GIF below
Add the email account that stores your contacts in the IOS mail app and enable Contacts. If you have a corporate email account added through a profile on your device, please check with your organisation's system administrator.
