Folders on iCloud

I don't want ALL of the files in my Documents folder on iCloud. How do I remove the folder from iCloud but still have certain folders within Documents on iCloud?

MacBook Pro 13″, macOS 10.15

You don't. If you sync desktop and documents, everything in those folders is synced. You can remove the folders from those locations and they will no longer sync.

I moved some folders of my Documents folder to iCloud drive. Only these folders are synchronised on iCloud now
