iCloud email ‘sign’ and ‘encryption’ ?

Neither of my iPhones nor iPad allow my iCloud email to have either ‘sign’ nor ‘auto encryption’ turned on, why is this?

Welcome to Apple Support Communities. Starting with the email sign-in, once you are signed in to your iCloud mail you remain signed in. If you opt to sign out, you will need to sign back in. However, this does not happen automatically.

Also, most iCloud services include end-to-end encryption, so there is nothing to turn on. Per the Apple Support article: "All traffic between your devices and iCloud Mail is encrypted with TLS 1.2. Consistent with standard industry practice, iCloud does not encrypt data stored on IMAP mail servers. All Apple email clients support optional S/MIME encryption."
