I had my phone stolen today. I went to “Find my” app and selected the “erase this device”. It show it is “Pending”. What does that mean?

If your device is offline, you see Erase Pending. The remote erase begins the next time it connects to a Wi-Fi or cellular network.

That means the erase will happen when the device next connects to the Internet.
In the Find My app I chose “Erase this device” for my stolen iPhone. Why does it show “Pending”?
