First the vocabulary. 😀 In Numbers a "sheet" is a "tab" in a document. It consists of a blank canvas on which you can place tables, charts, shapes and other objects.
You can have many sheets in a document, and many tables on each sheet.
Numbers formulas cannot reference ranges in tables on sheets in other documents.
They can, however, reference cells in tables on other sheets in the same document.
Because in Numbers it is easy to have multiple tables on one sheet (much easier than in other other spreadsheet apps) there usually is not much need to try to reference different documents. You can easily organize your work within one document.
If you really need to look up values in another document a script can sometimes help. But it is rarely worth the trouble.
