There is no specific unpair procedure,
except to either reset the box, or to pair a different remote.
One remote should be paired at all times.
Can you elaborate on what you are trying to accomplish?
That is correct. The new Siri Remote (2nd generation) requires tvOS 14.5 or later, which was current at time of introduction (March 2021) of that model remote. It wouldn’t work with Apple TV box units running an earlier versions of tvOS.
My suggestion: Even though you have the software update set to automatically update, it might not actually update, so manually check it periodically.

Whatever software version I was using would not allow a second/silver remote to pair.
Although I have it set to update automatically, the software on my Apple TV needed to be updated before a new silver remote could be paired.
After the 20+ minute update completed, the new silver remote connected immediately.
