Hi there anyfircrest,
You would need to cancel the entire backup, turn off Messages in iCloud, then start the backup again. It isn't possible to stop one text message from being backed up.
- To cancel the backup, go to Settings > your name > iCloud > iCloud Backup > Cancel Backup.
- To turn off Messages in iCloud go to Settings > your name > iCloud, then turn off Messages: Use Messages in iCloud
