Should I remove the sim card before trading in my iPhone or is erasing the phone enough to protect my privacy?

Your SIM card is useless to Apple. Remove it after performing the steps provided in the support article that led you here.

You can also use the same SIM card on your new iPhone, by contacting your carrier and letting them know about your new device's Serial & IMEI numbers.
