About Viewing Messages:

He probably has access to your Apple Account, and is able to see these through Messages on his Mac.


Secure your Info:

If concerned for device access, then (A)verify your devices, and (B)secure your account:

A. Verify your Devices:

Verify that all devices are logged in to your account, by using this link: Check your Apple ID Device List to See where you're Signed in - Apple Support


then...


B. Modify your Credentials:

Having been stollen, someone lily has your credentials. So, by all means, modifying them.

My guest ion is I had asked how he sees my deleted messages, he took my phone, entered something and me deleted messages came back. When he handed me the phone they were gone again. What did he do? Messages Enabled in iCloud:

Sounds to me like he enabled Messages in iCloud on his computer. Then, he uploaded them once more to your iPhone. Note that they will remain on his computer, until he deletes them. See Here: Set up iPhone to get SMS messages on Mac - Apple Support

Depending on how trusting you are with your device, and how often you're near a computer and/or network controlled by your boyfriend, there are several third party utilities, including iTunes itself, that allow local backups of your device over WiFi (or USB). Those utilities can then review those backups, including messages sent and received, based on the snapshot that was taken at that point in time.


The setup for this only requires a few moments with your phone, and knowing your device's passcode. After your device "trusts" the device controlling the backups, the backups are performed automatically when your phone is charging, on WiFi, and the screen is off, or on demand (if wireless configuration is set), or when the device is connected by USB to the computer controlling the backups. You can tell if your phone is backing up to a source other than iCloud if you notice a circle with two rotating arrows appearing in the top status bar of your device during use (though in most cases these backups occur when the device's screen is off).


If you think this sounds possible or likely, and you didn't give your significant other your express permission to do this, I would first change the passcode on your device by going to Settings > Face ID & Passcode > Change Passcode. Depending on your device, I would also recommend resetting Face ID to clear any alternate appearances, or clearing and re-adding any stored fingerprints to ensure that you and only you can unlock your device. Finally, go to Settings > General > Reset > Reset Location & Privacy - this will break any existing trust with a potential backup controller.


As previously noted, it also wouldn't hurt to change your Apple ID password just to be safe.
