I'm trying to connect my Epson L805 printer but I get an error instead. I've tryed to add it via WiFi, USB and by IP adress, but every time I got the same error. Restarting computer didn't help. Resetting printing system didn't help. Installing/uninstalling Epson drivers didn't help. Is there any other way to fix this issue?

The following Epson sites have drivers for macOS 12 (Monterey) as well:
Different regions may or may not offer different drivers.
It appears from this Epson Site it does not have Drivers that are supported in Monterey.
This does not mean it can never work, just need to use some Third Party Software that does.
That is not my area of Expertise sorry to say.
This Epson site does allow to select Monterrey (macOS 12.x) as one of the options.

I have made the same mistake many times, so no reason to step back. :-)
Sometimes it is almost impossible to distinguish a third party URL from an official site. A prefix and a hyphen can change everything.
