Typing X-bar in Pages - and switching keyboards - 2022 version
Short of just copy/paste (which is definitely on the list of options) -- how do you get the x-bar symbol (x, or any other letter with a straight bar on top of it, generally used to indicate the mean value in statistical calculations)?

Summarizing into a single post (because the two referenced are somewhat long and neither explains the complete process)
1) Add the Unicode keyboard in System Preferences (Keyboard > Input Sources > Other > Unicode Hex Input)
2) You will now see a flag icon in your top bar, next to the date/time -> click on that to switch the keyboard you are using.
Obviously, this would also apply to any other country keyboard option.
