OS 11 Booklet print feature not working properly

Does anyone have any idea how to get the Booklet printing feature to work on Preview? I print booklets regularly and have decided to finally just do them at home to save some $$.

However, when I have the pdf document in Preview and go to the print settings, I'm able to select "Booklet" mode, but the pages don't automatically arrange in the proper order since a booklet would need to fold in half (like a book). Instead, they format correctly, but are still "in order". So, page 1 is on the left side and page 2 is on the right, when really, for a booklet, the left side should be the last page, page 1 on the right, and page 2 directly behind page 1... which I understand is complicated, and why having this done automatically is soooo important!

I'm able to sidestep preview by opening the document in Adobe, but there's formatting and other issues when I do it this way.

All printer drivers and everything is up to date, and I actually have 2 printers hooked up. It's definitely not the printer, but an issue on the OS side. Would love any help or guidance here. Thanks!
