I saw my co worker walk away from my iphone 8 fast and immediately picked his phone up and was doing something to it, now every time I get on my phone he gets on his and keeps watching me. How could he have hacked it with a locked screen?

He couldn’t have if it was locked. You need to find another explanation. However, if he knew your Apple ID and password he could access your iCloud. See→If you think your Apple ID has been compromised - Apple Support. If that is not the answer he’s just messing with your head.

My advice, then, is don’t leave your phone unattended, make sure your Apple ID password is a strong one that someone who knows you won’t be able to guess, and enable 2 factor authentication on your Apple ID account if you haven’t already→Two-factor authentication for Apple ID - Apple Support
