How w to change an email address on family sharing

Change in what way? Where? For what purpose? Email Addresses aren't directly related to Family Sharing.
Email Addresses are used as Apple IDs. Apple IDs are the ones invited to Family Sharing. If a person updates the email address they use as their Apple ID on their account, it will immediately update for Family Sharing.
If they created a new Apple ID, with a different email address than the one they were using before, then you would need to invite that Apple ID to Family Sharing as its a completely different account. Link-> Set up Family Sharing - Invite your family - Apple Support
You should not be creating new Apple IDs unless its absolutely necessary. You can update the email address used as your Apple ID while retaining the same Apple ID so you retain access to all the features tied to that Apple ID including Family Sharing.
