Why is there no pivot Table on my numbers ribbon, under organize
No pivot Table in number, not in organizer, nowhere to be found, why do you guess. Updates are updated.

What version of macOS and Numbers are you using?
Is macOS 10.15 correct?
Older versions of Numbers don't have Pivot Tables!
I have an older iPad with Numbers 10.1 and this version has no Pivot Table!
Please try to get the latest macOS for you computer and then load the latest Numbers.
Best case this will give you Pivot Table.
