How would I be able to switch from an iPhone 12 to an iPhone 6s and vice versa?

That depends on what you mean by “switch”. You can move the phone number between the phones by removing and reinserting the SIM card from one phone to the other. You can also sync data between the phones using iCloud. If you explain what you want to achieve in a little more detail someone can make suggestions.
