Why doesn’t my Apple Watch come with the power adapter if they are going to go and change the cord to a type c?!!

you can

1. get another charging cable Apple Watch Magnetic Charging Cable (1 m) - Apple
2. get another ac charger Buy 20W USB-C Power Adapter - Apple
3. get an usb-c to usb-a converter Amazon.com : usb-a to usb-c adapter

it's not just for the watches all the cables they ship these days are usb-c

usb-a is going the ways of the dodos

Most likely because, several years ago, they changed the ports on Mac computers. The current cable plugs into a current Mac.

To reduce impact on the environment. You can use your old type a cable and charger to charge your new watch if you would like

Many users already have a lot of chargers and cables. If you don't, you'll want to get a new one.

You will already have an iPhone charger and can plug your Watch charging puck into it with a suitable (very low cost) adapter.
