With the physical remote, that should be automatic for most TVs and audio systems. For select devices that want non-standard signals, that device can be learned through Settings. Control your TV or receiver with your Apple TV Remote - Apple Support

With the software remote on iPhone or iPad, that is only supported for select AV receivers that support volume control over CEC. Then it would be automatic.
