Steps to take when iPhone is stolen

I have had my iPhone 7 plus stolen. I locked it straight away using Find My. Since it was stolen I have had two pings on Find My, both seems to be near phone shops, and I have now received a suspicious-looking email claiming to be from Apple (noreply@email.apple.com) asking for my Apple ID password. After the second ping I used the erase function on Find My, but it has still not been activated since the phone is offline. Are there any more steps I should/could take? Thanks!

For sure don't reply to that email or give your info out. If your iPhone, iPad, or iPod touch is lost or stolen - Apple Support
