I have a cellular Apple Watch SE which is paired to my IPhone 11 in the UK. When I arrive in France I will get a French sim for the phone so that I can use that network. Can I re-pair my watch with the new French sim and will it actually work on the French network.

It should work ok,make sure you check with the French network provider that they support the cellular watch.
And you will need to unpair the watch so that you can remove your UK cellular plan from the watch.

If it's a GPS only watch you shouldn't need to repair the watch as the watch automatically uses the phones number.
My issue is that I am moving country and wish to continue to use the cellular aspect of the watch with my new plan which I am using there. Do you you if it will work?
