why did my lightning digital av cable stop working on my ipad mini when ios was updated. my ipad is too old for current update but the lightning digital av cable worked perfectly before

First, with iOS 12.5.5 installed, you don’t have an iPad mini1 - as this 32-bit architecture device cannot be updated beyond iOS 9.3.5/6. You must instead have either an iPad mini2 or mini3 (both 64-bit devices).
As for your Apple Lightning Digital AV Adapter, there is no technical reason why it might cease to work with your iPad.
Have you tried a forced-restart of your iPad? A forced restart will often clear an isolated software issue:
