I have a cellular enabled watch connected to my phone. Going overseas next week, and I have purchased a travel SIM which I will put in my phone after take off. Will my Watch just automatically connect again to the new SIM?

To clarify, if you have a US watch, the cellular features of the watch will NOT function outside of the US. It will work with your phone as if it were a GPS only model.

Yes the watch will use whatever number it's paired phone is using.

Ah, I think that’s ok, I’m in Australia with an Australian-purchased watch, and travelling to Europe :)
Yes as pointed out,I forgot to mention this;
A cellular watch bought in the US will only function in North America,Canada,Mexico and Puerto Rico anywhere else it will function as a GPS only watch.
