Most optical recording devices DVD+R/+RW/-R/-RW will work with macOS, SuperDrive and third-party.
Blu-ray and HD DVD (if you can still find one) or DVD-RAM (if you can…) will require add-on software.
If you do want to use SuperDrive on a newer USB-C Mac, you will need a USB-C to USB-Adapter that provides sufficient power.
The Apple USB-C to USB-A adapter and select third-party adapters and docks do, but many others do not.
As for formats recorded…
Apple macOS can record disk images, as well as recording Apple-readable optical disk formats.

There are some open-source add-on optical-media recording tools around, if your recording needs vary. For odd formats and odd requirements, I’ve been using cdrtools/dvdrtools command-line tools, though there are third-party apps. Those are available via homebrew.

if you want to burn a DVD that will play in a stand-alone DVD player, then yes, you need additional software. if you just need basic DVD software, I use the free app Burn. it's good enough for my needs. but if you need it in a professional application, you may want to look into toast.

Yes, iDVD is not available anymore. Many developers, like Adobe, are abandoning DVD support. I think Toast is the best option.
