Using "Mail" as well as "Outlook 365" for email, i am not able to display the name i want. For example, i updated my name in Mail, but it still show the incorrect name and in Outlook, it does not allow me to change the name. Any ideas?

I am reasonably certain the name that appears is the one you configured the Microsoft Exchange account to have.
