You can set up the watch for Family Sharing and then it can call your own iPhone since it has an indecent number. Can be done but most att and Apple techs don’t know how to do it. Took me 8 calls.

That’s right. In which case it would not be ‘your watch’… at least not in the sense used by most people. “Your watch” would be linked to “your iphone”.
A device set up as an independent device via family sharing would not be… it would presumably not be used by ‘you’, but by someone else.
