I need to replace my current provider with a new sim only deal. Most of the sim only deals are 5g cards. If I put a 5g sim card in my Iphone XR or Iphone 8, will they connect to my network? Appreciate that both phones are not 5G network compatible but will they allow me to connect to 4g networks. Seems hard to pick up a 4g sim only with any decent data bundles.

It should work fine. The SIM supports 4G as well as 5G.
Yes, a 5G labeled SIM will work in a 4G phone, it has to be backwards compatible in case you lose the 5G signal.
To make sure, I'd contact your preferred cellular carrier and ask them.
