How is an iPhone 12 camera automatically switching record attributes?

Any ideas as to why videos recording on an iPhone 12 are changing multiple attributes from one recording to the next? Format, data rate, color space, audio channels. The operator (not a video pro) says he did not make any changes between shots. Thanks for any insight!

IPhone switching to slow-mo during recording. How can I prevent my iPhone (SE running 15.6.1) switching from normal video recording to slow-mo? I have the video frame rate set at 25 FPS to eliminates flicker under Australia 50 HTZ artificial light. The only option for slo-mo FPS is either 120 or 240, which means when the iPhone goes rogue and swaps to slo-mo mid-recording the footage has flicker that isn’t not removed by adjusting the speed bars under EDIT in Photo; and thus the recording is not useable. I have NEVER deliberately used the slo-mo option. I am not interested in EVER using it. How can I disable it to prevent this glitch from occurring again?

Record in camera is not there So, the record option in my camera is not there. I have IPhone 10 and I have tried the going to Settings - Perserve - Turing on everything but the thing is Creative Controls are not there and I probably think that’s the problem because it may need to be turned on but it does not appear. Someone please help!

These are the settings you are able to manually change on the device. If any of these correlate to the inconsistencies you’re seeing, double check with the videographer to see if they might have adjusted one of them: Change the camera’s video recording settings on iPhone - Apple Support
