The printer firmware may be updated via a utility from a printer manufacturer, or directly from a printer's control panel. Other printer software/drivers (if needed) can normally be downloaded from a printer manufacturer (or from Apple). A printer supporting the AirPrint technology can be used without additional software, provided that the macOS computer and the printer are connected to the same network.
For specific information, please let us know the exact Epson model.
Also, this has been posted in the macOS Mojave forum, but your profile indicates macOS 10.13 (High Sierra). Which operating system are you using, or which newer version do you want to use?

The exact Epson XP-600 model is not listed in About AirPrint - Apple Support (US edition, September 14, 2022), but AirPrint is mentioned in the following product specifications, so I assume that your printer supports the driverless AirPrint technology (maybe an early version).

This should mean that printing without additional drivers/software should be possible, if the printer and the new MacBook Air (running macOS 12.6) are connected to the same network. The two iPad Air and the MacBook Pro (running Mac OS X 10.7 or newer) could also use AirPrint.
Are you using (or have you tested) AirPrint for all involved computers and devices?
In case of a problem with AirPrint discovery for one or more computers/devices, and if all settings are OK, you could try the following full procedure (in this order):
Power off the Wi-Fi router, the printer, the Mac computers, the iPads, and all other devices/computers. Wait two to three minutes. Power on the router. Wait two to three minutes. Power on the printer. Wait a minute or two. Power on the Mac computers. Power on the iPads. Finally, power on all other devices/computers.

My device is a new MacBook Air running OS 15.6.1
All other devices have no problem communicating to the Epson XP 600 including 2 iPad Airs and a MacBook Pro.
