Can I turn off auto updates on my Mac or on Excel to stop verifying?
It is getting almost impossible to use my Mac and Office together. This verifying thing that happens after every update is too slow.

You can uncheck the box for autoupdates:
but if you do so you should frequently manually check for updates as many updates relate to security improvements.
