I have a new phone and I’m trying to connect it to the new phone and I don’t have my old phone or remember the Id for activation lock

If you can't gain access to the Apple ID that paired the watch to the phone, take the watch and the original receipt showing the serial number, plus your photo ID to an Apple Store and request that they remove the Activation Lock for you.
