There’s an update sometimes required to Finder (newer macOS) and to iTunes (older macOS) required for newer devices.

This is an update to iTunes or Finder, and not a more familiar update to macOS.

If that update is not getting downloaded, boot into Safe Mode and try connecting the iPhone again, and which should trigger and apply the update.
