So I landed in India on 28th morning and the first thing I did out of sheer curiosity is to connect my apple watch ultra bought in US with my Airtel mobile data and it WORKED......

Since I already had an apple watch series 4 earlier which was latched to the same mobile data plan so, so the watch gave an alert to call Airtel customer care to detach the older watch and then repair the new one with the standard steps using my iphone's apple watch app. So far its working like a charm. :) Hope you get the answer!!!

getting eSIM is pretty straight forward thing now a days - You have to log on to your respective - provider's website and log on to your account and then activate the eSIM for the number. I have added these links but I assume that Apple ill remove them as they did last time. Anyways - just check with yor provider on their customer care for eSIM Support for the same number which you are using it on your mobile. NO need to buy another SIM or connection. The idea behind the eSIM on apple Watch is to pick up the calls and read messages from the same number which you are using it for your apple iPhone. So please ensure that you are using the apple watch in tandem with the apple iPhone.

Also, just looked into this link from Apple - Apple Watch - Carriers - Apple

the bands supported on international model vs USA model has very less difference and also when I check with Indian carriers who are running on similar LTD frequency bands - https://www.datareign.com/4g-circles-in-india/

like BAND 3, 40, 5, 8, 1 is supported by Airtel in India and is supported band in US model - band 1,3,5,40 - So will it be technically supporting Indian carriers ?

If you were already using Apple Watch earlier on this number, then don’t forget to call your carrier’s customer service… because they need to detatch your older watch connection from their provisioning system and then May be 10/15 min you should be all set to latch this new watch to the same mobile plan. Call them and tell that you are trying to register new Apple Watch with the number but I had an older watch as well
