My apple watch series 3 won't update with my iPhone 12 pro.

Ive reset watch multiple times. I've deleted and reinstalled my Watch app on phone multiple times. Every time, watch will fail update at various stages in the process. I've gotten as far as "preparing" after update, but then will not proceed and wheel just spins on iPhone, or watch resets with no update and prompt to bring phone near watch to pair. Not sure of WatchOS version because can't access my watch now. iPhone 12 running 15.7.1 and up to date.
