Hello Rider650,
Welcome to Apple Support Communities. This might vary depending on which app you're printing from. For example, you can select page size in Pages as mention in Set paper size and orientation in Pages on iPhone - Apple Support.
However, since you are using an HP printer, we found the following guidance from HP printer setup (Apple AirPrint for iPhone, iPad).
1. Make sure the printer is turned on, cartridges are installed, and the paper you want to print on is loaded in the correct paper tray.
2. Open the item you want to print, and then tap the Share icon ( or ), or the menu icon .
3. Scroll down the screen and select Print from the list of options.
4. Select your printer, and then select print job settings such as paper size, number of copies, and page range.
NOTE: Available settings depend on the app you are printing from, the print job type, and your printer. For additional settings and scanning tools, install the HP Smart app.
5. Tap Print.
Take care.
