I haven't tried Apple Pay anywhere else since I got the 14 Pro but I've been to Ace 3 times and tried to use Apple Pay with my Apple Card. Declines every time. I have to use the physical card. Any idea why?

I suspect their response will be “the txn never made it to us” … but getting this info from GS is EASY.
The first thing I would do is try to use Apple Pay somewhere else so that you can determine if the problem is with your phone or with Ace Hardware's system.
I really do love GS's customer service! I did try to report it yesterday but didn't get me any sort of option for the issue I had, but I did go back to Ace and talk to them and they admitted it was probably their system.

Yeah, I've had that happen at a couple of stores. I'm seeing the same thing with using tap to pay with my (physical) debit card. There are some machines that just don't work.
